Over the years I have been making Chicken Noodle Soup for my family. I think I finally have a recipe that tastes great. It is a ONE POT CHICKEN NOODLE SOUP!!
Get your Cast Iron Pot. I use chicken breast strips and cut them up into bite size pieces. Brown up your chicken just a bit.
While your chicken is cooking. Prep the vegetables. Your White Onion, Celery, and Carrots.
Deglaze the cast iron pot with a little bit of chicken stock. Scrape the bottom of the pan to get all that yummy flavor off of it.
Add your White Onion in to the cast iron pot. Let the Onion cook a little bit and then add the rest of the vegetables. Then the Chicken Stock after so you do not splatter.
Bring the stock up the a boil. After it boils for a minute, turn the heat down to low. Add a pinch of (Sea) Salt and Pepper. Lid on and heat on low.
Stir once every 10 minutes so the vegetable cook evenly. (Remember you are on a stove and not in a slow cooker).
After softening the vegetables, add the Pasta.
Now, no matter what I do when I add the pasta of noodles they always over cook. Does anyone have any suggestions on what kind of pasta to put in? I am wondering if I make my own noodles they will hold up better. That’s the only FAIL, I have.
