Hello Everyone! I know it is Wednesday and I am sorry. Sunday I was exhausted and had a huge head ache. I am better now. I thought I would give you a little make-up blog. It is October and Fall is here. The crisp air, rain, and sun. With the chilly temperatures I love to bake during this time of year.
Here are some Pumpkin Muffins I made up today.
Make sure you have a wooden spoon, spatula, 2 bowls, 12 cup muffin tin or two 6 cup muffin tin, cupcake papers (preferably leaf or fall themed ones), measuring cups, and teaspoon and tablespoon measurers.
1/2 cup Canola Oil or Vegetable Oil
1/2 pumpkin (from a can)
and 3/4 cup milk
In a separate bowl mix…
2 cup All purpose Flour (not wheat)
1/3 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon Nutmeg (because nutmeg goes with pumpkin and I use it in pumpkin pie as well).
Add all the dry to the wet ingredients. Mix until the dry ingredients are moist. The batter should be lumpy.
Put the mixture into the muffin tin(s). Sprinkle some sugar of them (optional).
Also, Preheat the oven to 400 degrees F.
Bake for 20 minutes. Let rest fro 2 minutes in the muffin tin. Still be careful as the muffin tin could still be hot when you take them out to fully cool.
After cooled. You are welcome to them. Even though they are good still a little warm with a bit of butter and more sugar.
